Tabule with micro plants or quinoa

Ingredients
(for 1 serving)
  • 100-150gr quinoa
  • 3 tablespoons diced tomato
  • 2 tablespoons diced cucumber
  • 1 tablespoon diced red onion
  • 3 tablespoons chopped parsley
  • 1 teaspoon chopped peppermint
  • ½ teaspoon zest from a non-waxed lemon
  • Juice from ½ lemon
  • 3-4 teaspoons olive oil
  • Salt & pepper
Preparation

Μix all the ingredients in a bowl and let them marinate for 15’
